Ingredients for 1 serving
1 organic pork chop (approx. 2-3 cm thick)
2 sprigs of fresh thyme
30 g butter
1 organic lemon (sliced)
Salt
Freshly ground black pepper
Preparation
Prepare the meat: Remove the pork chop from the refrigerator about 30 minutes before cooking to allow it to reach room temperature. This ensures even cooking.
Season: Just before cooking, season the chop generously with salt and pepper on both sides.

Heat the pan: Heat the cast iron pan to medium-high heat. It needs to be very hot to give the meat a nice crust.
Fry: Add a little neutral oil (e.g., rapeseed oil) to the pan, lightly covering the bottom. Place the chop in the pan and sear for about 3-4 minutes without moving it, until a golden brown crust forms.
Turn: Turn the chop over and reduce the heat to medium.
Butter, Thyme & Garlic: Add the butter, thyme sprigs, and optionally the crushed garlic clove to the pan. Melt the butter and drizzle the melted butter over the chop with a spoon (to flavor it).
Lemon: Shortly before the end of the cooking time, squeeze the juice of half a lemon over the chop and sprinkle with a little lemon zest.
Check the internal temperature: Use a meat thermometer to measure the internal temperature. For a perfectly cooked pork chop, aim for an internal temperature of 62-65°C (145-149°F). Then remove the chop from the pan.
Rest: Let the chop rest on a plate for 5 minutes to allow the juices to redistribute and keep the meat tender.

• 62-65 °C: Juicy, tender, and slightly pink inside (medium)
• Above 70 °C, the meat tends to be drier and firmer
