Grilled Denver Cut Steak from a cast iron pan with fresh vegetables and sautéed chorizo, chanterelles, and onions

Ingredients for 2 people

2 Denver Cut Steaks (approx. 250-300 g each)
150 g chorizo, sliced
150 g fresh chanterelles, trimmed
1 onion, sliced
Vegetables of your choice
2 garlic cloves, finely chopped
2 tablespoons olive oil
1 tablespoon butter
Salt and pepper
meat4you seasoning

Preparation: Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to reach room temperature. Season with meat4you seasoning.

Prepare the vegetables: Wash, trim, and cut the vegetables into the desired shape. Slice the onion and trim the chanterelles.

Sauté the chorizo: Heat 1 tablespoon of olive oil in a cast iron pan. Fry the chorizo and onion slices over medium heat until crispy and add the chanterelle mushrooms.

Cook the vegetables: Now prepare the various vegetables to your liking. Season with salt and pepper. Keep the vegetables warm.

Fry the steaks: Wipe the pan with a cloth and return to the heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter to the hot pan. Sear the steaks for about 3-4 minutes per side, depending on their thickness and desired doneness, until a nice crust develops. Season the steaks with butter while cooking.

Finally, finely carve the meat and serve.

Nice to know:  The Denver Cut Steak is a real insider tip among steak lovers. It comes from the so-called "chuck" area of the beef, more specifically from the shoulder blade muscle. Despite its origin in the shoulder, the Denver Cut Steak is tender and flavorful – a real treat!

What makes the Denver Cut Steak so special? It has fine marbling, tiny veins of fat that melt during cooking, giving the meat its intense flavor. The texture is tender yet firm to the bite—perfect for those seeking a steak with character.
