The veal fillet is the most tender part of the veal and one of the finest cuts of meat of all. 1 fillet of veal is between 700 and 800g.

"The veal comes from five to a maximum of eight months old female or male animals. It is very fine-fibred and low in fat and therefore easy to digest and wholesome. The high-quality pink to reddish Swiss veal is not only tender and juicy, but also has a unique taste. Pieces from the forequarters are ideal for stewing, the even more precious pieces from the hindquarters for pan frying.
