Born from an idea within the walls of a Swiss mountain fortress, this cheese unites history, craftsmanship, and luxury. Aged under specially adapted, bunker-like conditions – with constant temperature, perfect humidity, and absolute stillness – it develops an incomparable depth, creamy texture, and refined spiciness.
Made from thermized raw milk sourced from silage-free production and the milk of happy Appenzell cows, it becomes a semi-hard cheese with 53% FDM that melts delicately and tells stories on the tongue.
