Ingredients for 2 people
For the Wagyu Entrecote:
2 Wagyu Entrecote (approx. 200-300 g each)
Salt and pepper
Olive oil for grilling
For the Creamed Celery:
500 g celeriac, peeled and diced
200 ml single cream
20 g fresh black truffle or pickled truffle slices
50 g butter
Salt and pepper
Freshly grated nutmeg (to taste)
For the Sautéed Radicchio:
1 head of radicchio, thinly sliced
2 tbsp olive oil
1 spring onion, finely sliced
Salt and pepper
Preparation
Prepare the creamed celery: Briefly sauté the celery in a pan and add the cream. Add the truffle slices and let it simmer briefly and keep warm.
Sauté the radicchio: Heat the olive oil in a pan. Sauté the finely chopped radicchio and spring onions briefly and season with salt and pepper.
Grill the Wagyu entrecote: You can do this on the grill or in a grill pan. Both must be very hot to achieve beautiful grill marks. It is important not to overcook the steak.
The ideal internal temperature is 50 degrees Celsius. Remove the meat from the pan or grill and allow it to recover for 5 minutes. Then you can finely carve and serve it.
