The world of truffles, the passion of Giuliano Tartufi

Giuliano Tartufi is a family business specializing in the production of fresh truffles and truffle products. The company was founded in the 80s by Giuliano Martinelli, who used to go truffle hunting with his dog from a young age. Giuliano's goal is to share the culinary traditions and specialties of his land with the whole world. The company stands for quality, freshness and safety.

 

Definition of truffles

The truffle is a very special mushroom that grows near the roots of some tree species such as oak, hazelnut, poplar, linden. He was born underground and therefore particularly difficult to find. The best truffles grow in Italy and are therefore very popular. They not only taste particularly good, but are also very healthy. Truffles contain many vitamins and minerals that are good for our body. There are over 80 different types of truffles, not all of which are edible. The best known are certainly the white Alba truffle and the black Perigord truffle.

It is exciting that for centuries truffles were used exclusively in rural, simple cuisine and have only found a place in haute cuisine in modern times.

Here is a small selection of the most important edible truffles:

The white truffle, also called "Trifola".

· The precious black truffle, also called “Nero di Norcia”.

· The black summer truffle, also called scorzone.

Nice to know

Durability:

Summer and autumn truffles, 4 – 6 days

White truffles, 3 – 4 days

Périgord truffles, 6 – 8 days


Storage:
In a sealed container, in a paper towel - in the refrigerator
Definitely "ventilate" once a day
exchange paper
do not store in rice (this removes the moisture from the truffle)


Cleaning:
if necessary with:
- Dry hand brush
- Kitchen Carver

avoid:
- Wash with water
- Peel

Amounts per person as a main course:
Summer and autumn truffles, 10 – 12 gr
White truffles, 5-8 gr
Périgord truffles, 8 – 10 gr


Tip:
«Leftovers» for white truffles
Store fresh chicken eggs in the same container as the truffles.

Use it to conjure up an omelet or scrambled eggs and refine it with the leftover truffles – a treat the day after.
