Petit Tender
Teres Major, a real insider tip of the steak culture, comes from the bow or shoulder of beef and is ideal for short frying, for example as a steak.
Originally a butcher's cut set aside by connoisseurs, the Teres Major weighs around 300-350g and is also known as a flat fillet, petite tender or shoulder roll.
A great cut that doesn't require much preparation. Simply take it out of the cooler half an hour before preparation and fry it without seasoning for about 2-3 minutes per side.
Now take the piece off the grill and let it rest briefly. It's important with the second cuts; that they are sliced finely. Use a good salt/sea salt and a mild pepper.

The name comes from the medical name Musculus Teres Major, known for its role in the movement of the legs. Despite its medicinal connection, this cut of meat is popular in the steak world due to its tenderness and short-fiber structure.
The muscle sits on the inside of the shoulder blade, especially in grazing animals that are constantly moving, and provides a delicate taste experience.
