We made a marinade from soy sauce, ginger, lemongrass, ketchup, red Thai paste and meat4you seasoning and marinated the pork crust roast in it for 12 hours.
After these 12 hours, the roast has absorbed all the aromas and already smells delicious.
Now heat your oven to 100 degrees. Place the marinated roast on a tray and put it in the oven. Below you can see the different process steps we used to get the roast juicy and crispy at the same time.
Oven on convection:
-5 hours at 100 degrees,
-6 hours at 80 degrees
-6 hours at 60 degrees
