Swiss veal comes from five to up to eight months old male or female animals. It is very fine-fibred and low in fat, which makes it easily digestible and wholesome. The high-quality pink to reddish Swiss veal is not only tender and succulent, it also has a distinctive taste. Cuts from the forequarter are ideal for braising and the even finer cuts from the hindquarter for sauté.
