Braised and Pulled Oxtail Burger with Apple BBQ Sauce, Fried Onions, Crispy Bacon, and Grilled Apple Slices

Ingredients for 4 servings:

For the Pulled Beef:
1 kg oxtail
2 tbsp vegetable oil
2 onions, roughly chopped
4 garlic cloves, roughly chopped
2 carrots, roughly chopped
1 celery stalk, roughly chopped
400 g tomatoes, quartered
500 ml beef broth
2 tbsp Worcestershire sauce
2 tbsp apple cider vinegar
1-2 tsp smoked paprika
1 tsp cumin
1 tsp dried or fresh thyme
1 tsp salt
1/2 tsp black pepper

For the BBQ Sauce:
200 ml ketchup
2 tbsp honey
1 apple, grated
4 tbsp thick soy sauce
1 tbsp sweet chili sauce
1 tbsp Worcestershire sauce
1 tsp smoked paprika
Salt and pepper


Preparation:

 

Searing the Oxtail: If necessary, cut the oxtail into pieces.

Heat vegetable oil in a heavy pot or deep pan. Brown the oxtail pieces on all sides until they are nicely seared. Then, remove the pieces from the pot and set them aside.
In the same pot, add the onions, carrots, celery, and garlic, and sauté for 5-7 minutes until the vegetables soften.

Braised Cooking: Add the tomato pieces to the pot and stir well. Then, add the beef broth, Worcestershire sauce, apple cider vinegar, smoked paprika, cumin, thyme, salt, and some ground pepper. Bring everything to a boil.

Return the browned oxtail pieces to the pot. Reduce the heat to low, cover the pot, and let it simmer for 3-4 hours, or until the meat is very tender and can be easily pulled apart. Alternatively, you can braise the dish in the oven at 150°C (300°F) for about 3-4 hours.

BBQ Sauce: In a separate bowl, mix the ketchup, honey, soy sauce, grated apple, Worcestershire sauce, smoked paprika, and a little sweet chili sauce. Season with salt and pepper to taste.

Prepare Pulled Oxtail: After cooking, remove the oxtail from the pot and place it on a plate.

Remove the bones and shred the meat with two forks. Reduce the remaining liquid in the pot over medium heat, then mix it with the freshly made BBQ sauce. Add the shredded meat back into the pot and mix well with the sauce. Season with salt and pepper.

Burger Assembly: The burger is filled with onions braised in maple syrup, crispy bacon, and grilled apple slices.

Alternative Option: Instead of hamburger buns, you can also use tortillas and fill them. Add fresh lime, some sour cream, and fresh cilantro, and you have a Mexican BBQ variation!

Pulled beef or pulled ox-tail is a delicious dish that consists of slow-cooked, tender beef. When prepared, the meat, often from the shoulder or breast, is usually cooked at a low temperature for several hours until it is so tender that it can be pulled apart with a fork - hence the name "pulled".
 
Preparation
 
The classic method of preparing pulled beef is braising in the oven or in a slow cooker, but it is also commonly prepared on the grill or in a smoker. The meat is often marinated beforehand or rubbed with a spice mixture that can consist of ingredients such as paprika, cumin, garlic powder and black pepper. These spices give the pulled beef an intense flavour.
