Fried beef liver patties with fried onions, fried potatoes and balsamic sauce

Ingredients for 2 people

For the beef liver patties:
400 g beef liver patties
2-3 tbsp flour
3-4 tbsp olive oil or butter
Salt and pepper
1-2 tsp fresh or dried herbs (e.g. thyme or parsley)

For the fried potatoes:
300 g waxy potatoes
2-3 tbsp oil and a little butter
Salt and pepper
1 tsp paprika

For the fried onions:
2 large onions, cut into rings
2-3 tbsp flour
Oil or butter
Salt

For the balsamic sauce:
200 ml balsamic vinegar
200 ml beef broth
1 tbsp honey or sugar
1-2 tsp cornstarch with a little water
Salt and pepper

 

Preparation

 

Fried onions Prepare: Heat oil or butter in a pan. Lightly flour the onion rings and place them evenly in the pan. Fry over medium heat until golden brown and crispy. Season with a little salt and keep warm.

Prepare fried potatoes: Cut the potatoes into even cubes or slices.
Cook in a pan of salted water for about 10-15 minutes until cooked but still firm. Drain and let the steam evaporate briefly.
Heat the oil in a pan and fry the potatoes over medium heat until golden brown. Turn occasionally. Season with salt, pepper and paprika powder. Keep the fried potatoes warm.

Prepare balsamic jus: Mix the balsamic vinegar with the beef broth and the honey or sugar in a pan. Bring to the boil and reduce over low heat for about 10-15 minutes.
For a thicker consistency, add a little cornstarch dissolved in water and continue to simmer. Season with salt and pepper.

Prepare beef liver patties: Dust the beef liver patties with flour and shake off any excess flour.
Heat the oil and butter in a pan and fry the patties over high heat for 2-3 minutes per side, depending on their thickness, until they are nicely browned. Do not fry for too long, otherwise the liver will dry out. Season with salt, pepper and fresh herbs.

Here's a tip: Soak the liver in milk an hour before frying and store in the refrigerator. By soaking the liver in milk, it becomes milder in taste and contracts less when fried.
