The rib eye is a cut from the top part of the centre section of rib and is also known as prime ribs. It belongs to the most used muscle groups and is ideal for frying.

Swiss veal comes from five to up to eight months old male or female animals. It is very fine-fibred and low in fat, which makes it easily digestible and wholesome. The high-quality pink to reddish Swiss veal is not only tender and succulent, it also has a distinctive taste. Cuts from the forequarter are ideal for braising and the even finer cuts from the hindquarter for sauté.
