Ingredients for 4 servings
600 g lamb strips cut from the lamb loin
70 g raspberries
70 g red currants
70 g blueberries
4 spring onions
150 g mixed seeds (e.g. sunflower and pumpkin seeds)
1 red bell pepper
100 g croutons
100 g feta cheese
1 head of crisp lettuce
3 tbsp olive oil
Salt and pepper
For the Mint Vinaigrette
4 tbsp olive oil
2 tbsp white wine vinegar or apple cider vinegar
1 tsp honey
1 small garlic clove, finely chopped
1 handful fresh mint leaves, finely chopped

Preparation
Prepare the seed mix: If necessary, cook the seed mix according to the package instructions and allow it to cool.
Prepare and cook the lamb: Cut the lamb loin into thin strips. Season with salt and pepper. Heat 2 tablespoons of olive oil in a large frying pan and sear the meat over high heat until golden brown and tender. Remove from the pan and keep warm.
Prepare the vegetables and berries: Slice the spring onions into thin rings. Remove the seeds from the bell pepper and cut it into thin strips. Wash the berries. Wash and dry the lettuce thoroughly.
Prepare the vinaigrette: Whisk together the olive oil, vinegar, honey, garlic and mint in a bowl. Season with salt and pepper to taste.
Mix the salad: Combine the lettuce, spring onions, bell pepper and seed mix in a large bowl. Pour over the vinaigrette and toss well.
Serve: Arrange the salad on plates and top with the warm lamb strips. Crumble the feta cheese over the salad and distribute the berries attractively for a fresh and colourful presentation.
