For more than 40 years, the Gomez-Torres and Mora-Figueroa family have been producing raw ham and sausages using traditional, natural methods. Only pure-bred pigs are bred and kept under controlled rearing. After salting, the hams are ripened in drying rooms. The whole legs mature in pure air, consciously exposed to temperature fluctuations.
