Crispy oven-baked rabbit pieces with fried potatoes and cocktail sauce with cognac

Ingredients for 2 people

For the rabbit pieces:
1 rabbit  or cutted in pieces
4 tbsp olive oil
2 garlic cloves, chopped
1 tsp rosemary, fresh or dried
1 tsp thyme, fresh or dried
meat4you seasoning
1 lemon, sliced

For the fried potatoes:
500 g waxy potatoes
3 tbsp olive oil
1 tsp meat4you seasoning
Salt and pepper

For the cocktail sauce:
100 g mayonnaise
2 tbsp ketchup
1 tsp Worcestershire sauce
1 tsp lemon juice
Tabasco
2 cl cognac
Salt and pepper

Preparation

Marinate the rabbit pieces: Mix the olive oil, chopped garlic, rosemary, thyme and meat4you seasoning in a bowl. Put the rabbit pieces in the marinade and rub well. Place the lemon slices on the Place the pieces. Cover and leave to marinate in the refrigerator for at least 1 hour.

Preheat the oven: Preheat the oven to 200°C (top/bottom heat).

Prepare the potatoes: Cut them into even sticks. Mix the potato sticks in a bowl with olive oil and meat4you seasoning until they are evenly covered.

Place the rabbit and potatoes in the oven: Line a baking tray with baking paper or lightly grease it. Place the marinated rabbit pieces on the baking tray with the skin side up.
Distribute the potato sticks around the rabbit pieces. Place everything in the preheated oven and bake for approx. 45-55 minutes until the rabbit pieces are golden and crispy and the internal temperature has reached at least 70°C. The potatoes should also be crispy and golden brown.

Prepare cocktail sauce: In a small bowl, mix mayonnaise, ketchup, Worcestershire sauce, lemon juice, Tabasco and cognac well. Season with salt and pepper.

Instead of grilled chicken, grilled rabbit. What works with chicken also works with rabbit.
