Roasted Bison sirloin cap on Mango Chili Risotto

Ingredients for 3-4 people

For the Bison sirloin cap:
800g Bison sirloin cap
2 tbsp olive oil
Salt and pepper
Fresh herbs (e.g., rosemary, thyme) for seasoning
2 cloves garlic

For the Mango Chili Risotto:
200g Arborio rice
1 small onion, finely chopped
1 clove garlic, finely chopped
1 liter vegetable stock
150ml white wine
1 ripe mango, diced
4 tbsp sweet chili sauce
2 tbsp butter
Salt and pepper
1 bunch rocket salad
1 sprig of peppermint

 

Preparation

 

Remove the Bison sirloin cap from the refrigerator and let it come to room temperature (approx. 30 minutes).
Heat the vegetable stock in a saucepan and keep warm.

Prepare the risotto: Heat 1-2 tablespoons of olive oil in a saucepan and sauté the chopped onion until translucent.

Add the garlic and sauté briefly. Add the Arborio rice and toast for 2-3 minutes, stirring, until the rice is slightly translucent. Add the white wine and simmer, stirring, until the wine is almost completely absorbed. Gradually add the warm vegetable stock, stirring continuously until the rice has absorbed the liquid. This will take about 15-20 minutes until the rice is al dente. Shortly before the end of the cooking time, stir in the diced mango and the sweet chili sauce, the peppermint and rocket salad. Season with salt and pepper. The risotto should be creamy.


Fry the bison sirloin cap: Heat 2 tablespoons of olive oil in a pan. Season the bison sirloin cap with salt and pepper.

Place the meat in the hot pan and sear over high heat for about 2-3 minutes on each side, depending on the thickness of the meat. For a pinkish finish, the internal temperature should be approximately 54-57°C.
Remove the meat from the pan and finely slice.

Nice to know:  The bison is a majestic animal belonging to the cattle family (Bovidae) and is found primarily in North America and Europe.

There are two main species:

American bison (Bison bison) 
European bison (Bison bonasus)

The American bison is one of the largest land mammals in North America and can weigh up to 1000 kg. It has a distinctive, massive shoulder, giving it a striking appearance. This species played a central role in the culture of the indigenous peoples of North America, both as a food source and in spiritual practices. In the 19th century, the population was severely decimated by overhunting and habitat changes, but through conservation measures and reintroduction programs, the bison population has recovered in recent decades.
